If you are feeling a little overwhelmed from all the festive eating, try this simple, nourishing soup to tame your tummy and reset your system.
Preparation time: 40 minutesServes 8
Ingredients600g Skinless chicken fillet,scalded in boiling water1 litre Fat-free and low-sodiumchicken broth20g Ginseng root10 Seedless red dates2 tbsp Wolfberries3 cups Water¼ Whole cabbage
Optional:100 ml Rice wine½ cup Freshly chopped corianderMethod1. In a large pot, combine scalded chicken pieces, broth, herbs and cabbage. Top up the pot with 3 cups of water and bring the mixture to a boil2. Once the soup is boiling, reduce the heat and simmer for 20 minutes3. Remove the cabbage, slice into 2cm strips and return to the soup. Simmer for another 3 minutes4. Add salt and pepper to taste. If desired, add rice wine5. Garnish with chopped coriander and serve hot
