What you need for this Claypot Rice Recipe

Brown rice *
2 cups

Seasoning

Pumpkin, cut into cubes
200 g

Vegetarian oyster sauce *
2 tbsp

Small carrot, cut into cubes​

Pepper
A dash

Long beans, cut into bite-sized pieces
3 stalks

 

Fresh mushrooms, cut into cubes

Garlic, minced
1 tsp

 

Spring onion, chopped finely (optional)
2 stalks

 

Vegetable stock *
3 cups

 

Oil*
1 tbsp

How to cook this dish:

  1. Heat a little oil in a frying pan and stir-fry garlic till fragnant.
  2. Add the stir-fried garlic, cubed ingredients, brown rice and seasoning into the rice cooker and mix well.
  3. Add in vegetable stock and switch on the rice cooker.
  4. Once the rice is cooked, garnish with spring onions and serve.

Brown rice is an example of wholegrains. Wholegrains contain higher amounts of fibre, vitamins, minerals and antioxidants. When cooking brown rice, pre-soak them before cooking or add more water when cooking.
