Cooking with Chef Mel Dean... Kuih Bakar Cempedak

We have all heard of Kuih Bakar Pandan and Kuih Bakar Berlauk. This time, try Kuih Bakar Cempedak with a little healthy twist. Perfect to enjoy with your family and loved ones.

Ingredients
Wet Ingredients
- 300g cempedak flesh
- 200ml low-fat coconut milk
- 450ml low-fat fresh milk
- 2 eggs
Dry Ingredients
- 100g cempedak flesh
- ¾ cup of wholemeal flour
- 1¼ cup of wheat flour
- 80g brown sugar
- 80g low-fat margarine
- Pinch of sea salt
- 1 tbsp sesame seeds
- 1 tbsp canola oil
Cooking Method
1. In a blender, add all the wet ingredients and blend till smooth.
2. Add the brown sugar, margarine, sea salt, and blend for 30 seconds.
3. Pour in the flour and blend till smooth.
4. Spread the oil in a baking tray and put in a pre-heated oven for 10 minutes at 180°C.
5. Pour in the mixture and spread evenly. Drizzle the sesame seeds.
6. Bake for 45 minutes to 1 hour, until golden brown at 170°C.
7. Cool for 20 minutes and garnish with cempedak flesh before serving.
