Orange Carrot Cake

Ingredients

  • 1 ⅔ cup flour
  • 1 ½ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ¾ tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • ½ cup sugar
  • ½ cup dark brown sugar
  • Juice of 1 orange (~70ml)
  • Zest of 1 orange
  • ¼ cup of canola oil
  • 2 carrots, grated
  • 50g flaked almonds

Method

  1. Pre-heat oven to 180 degrees Celsius.
  2. Combine flour, baking soda, cinnamon, baking powder and salt. Whisk the flour mixture with a whisk or fork.
  3. In a large bowl, with mixer on medium speed, beat eggs until blended. Add in sugars; beat for 2 minutes. On low speed, beat in orange juice and oil.
  4. Add flour mixture; stir until just combined. Stir in carrots and orange zest.
  5. Pour batter into pan. Top with almonds.
  6. Bake for 20 minutes at 180 degrees Celsius. Lower temperature to 160 degrees Celsius and bake for another 25 minutes or until toothpick inserted in centre comes out clean.
  7. Cool in pan 10 minutes. Invert cake onto rack; cool completely.
